I worked with Tommy for almost 3 months setting up a Christmas present for my bosses Horst and Karen Pfeifer from their loyal employees.  They own a restaurant in Manchac, Louisiana on Lake Maurepas called "Middendorf's".  The restaurant is favorite and a long standing tradition for the New Orleans/Baton Rouge area.  Besides specializing in their delicious thin crispy catfish filets they also feature "exotic chickens" for your viewing pleasure in their little "swamp chicken coop" out back.  The addition of the three birds Tommy hand raised, 2 White Onagadori's and a female Vietnamese Jungle Fowl is quite impressive!  The birds arrived safe and sound and healthy.  They were very good in the 45 minute car ride from New Orleans to their new home at Middendorf's.  One of them even laid an egg on the trip from San Diego to New Orleans in her excitement of reaching her new home.  Upon their arrival they immediately took to their new home and all the other inhabitants of the chicken community welcomed them with open feathers.  Karen, unfortunately was visiting family in Germany when her new babies arrived but we took plenty of pictures and emailed them to her.  To our excitement she emailed back that they were the "best gift ever"!  She is really looking forward to coming back to Middendorf's and meeting the new additions.

Tommy Truong was very patient with us through our first journey into "The Exotic Chicken World" and the experience has been memorable and very pleasant.  He really seems to know his "stuff" and really cares about the birds he raises.  I would definitely recommend him and his knowledge of birds to all bird connoisseurs of the world.

If you ever find yourself in Louisiana come on by Middendorf's for a delicious bite to eat and meet the birds Tommy so lovingly hatched and raised from the egg.
